Mediterranean Chicken Couscous


Every once and a while, I like to sit down with my cookbooks and pick out some new meals to try.  One of my favorite wedding gifts was the Southern Living All Time Favorites cookbook from one of my mom's dear friends.  I picked out this recipe from the light and healthy section and I really loved it.  The steps are very easy and the results were delicious.   The only thing I will say is that I preferred it more over the next couple days as a cold dish rather than the day I made it warm.  I think this could really make a great pot luck item too!

Step One: Microwave the 1 1/4 cups chicken broth with the couscous seasoning packet for 3-5 minutes or until it starts to boil.



Step Two: Pour the boiling chicken broth over the couscous in a large bowl and cover for 5 minutes.


Step Three: Prepare your ingredients ( I have 3 cups of cooked and chopped chicken to the side).


 Step Four: Once the couscous is ready: uncover it and fluff it with a fork.  Stir in your three cups of chicken.


Step Five: Mix in the Tomatoes, Basil, Feta Cheese, Lemon Juice, Lemon Zest and Fresh Pepper.


Garnish with some fresh basil and you are all ready to eat!
 Paired with a greek salad, this makes a great dinner.

Fringe Benefits



A couple of weeks ago,  I came across a flyer for a wine tasting event in a local town and I jumped at it.  It seemed like such a fun Friday night activity and not too much of that comes up around here.  So when this past Friday rolled around, I was super excited.  I was running around all day doing this and that, so the time to get ready rolled up quite quickly.  I stepped away from what I was doing and stepped outside so I could get a feel for what I should wear.  One work comes to mind: OVEN.  It was crazy hot - so I knew right then the outfit would need to be cool.  I peeked through my dress selection and came across this little fringe mini which I had completely forgotten about.  I knew right then it was the best pick. Something about it just screamed "cool" - maybe it's the flowy fringe or the icy blue color.  Paired with some flat sandals to be comfy as we walked around town and in and out of shops - it was the perfect outfit.  Considering this heat, I think I will be keeping this cool little mini at the front of my closet this Summer.

Gloss Addict



So, this past weekend I did a thorough clean of the bathroom, which inspired me to go through my makeup.  I cleaned all my brushes, threw out some old shadows, and mascaras and was feeling quite good about it all.  Then I went on to clean through my vanity drawers and came across the above mess.  Looks like I've got a problem .. a lip gloss, lip balm, chapstick kind of problem.  Ok, I'll admit  it's not like I didn't know this was going on, but I seriously can't helping picking up lip stuff wherever I go.  I decided to really weed through to the essentials that I use everyday and share them with you.  Since I have accumulated so many, I should be some sort of expert, right? Below is my lipgloss chart and an explanation of why these are my favorites.  Kiss Kiss!

one: Our local CVS just started to carry NYX and I love it.  I have heard a lot of great reviews about NYX butter glosses and it's all true.  Creme Brûlée is the perfect neutral for my face.

two: If I haven't eaten breakfast or had my coffee before I do my makeup, this is what I put on. It gives good moisture and lovely color and I don't have to worry about it all coming off on my food.  This is also a great one for when I'm popping out to the gym.

three: This is probably my favorite gloss.  It's not sticky at all and it gives the perfect glossy and rosy sheen (not to mention it tastes and smells like a raspberry filled doughnut).

four: No fuss favorite. This also smells great and looks great minus the glossy look of #3. I always keep this in my purse .. my all time favorite next to #3.

five: I bought this after it stared me down in the checkout area of CVS.  Can't go wrong with the moisture benefits of Vaseline, but this one is special because it's pink and has a nice rose scent.

six: This saved my lips this past winter and I fell in love so I now keep it on my bedside table.  If my lips are the slightest bit chapped I put this on - problem solved.

seven, eight and nine: While these are all great lip balms in their own way, my love for them is purely about scent.  I consider these three to be perfume balms, they emit this lovely smell when you put them on.  The Tokoyo Milk Clove Cigarette has this really wonderful clove scent, but you've really got to like cloves - I love this one when I'm out at night.  Rosebud Salve's Strawberry Lip Balm just reminds me of all my childhood Bonnie Bell's and Nivea Raspberry Rose is just lovely - exactly like it promises:  Raspberries and Roses.

Summer Daisy


Every once and a while I like to update my jewelry basics.  I try to stay pretty classic, because I like to wear the same pieces everyday and I like things that go with a lot.  A couple weeks back, I purchased all three pieces from the Pandora Oopsie Daisy Collection and I am really loving them.  The daisy is a two tone mix of Sterling Silver and 14K Yellow Gold.  I really love two tone pieces, because they give me the freedom to add other silver and gold accessories as I wish. I also picked up some flower clips to match for my Pandora bracelet.  I'm usually not interested in buying jewelry as a set, but this one it so subtle and pretty that I couldn't resist.  I know I will enjoy wearing them all separately as well.


 I'm wearing my new jewelry with one of my favorite Summer LBD's, a slouchy vest, and some cheetah accessories .. I'm so ready for Summer!
