Mediterranean Chicken Couscous


Every once and a while, I like to sit down with my cookbooks and pick out some new meals to try.  One of my favorite wedding gifts was the Southern Living All Time Favorites cookbook from one of my mom's dear friends.  I picked out this recipe from the light and healthy section and I really loved it.  The steps are very easy and the results were delicious.   The only thing I will say is that I preferred it more over the next couple days as a cold dish rather than the day I made it warm.  I think this could really make a great pot luck item too!

Step One: Microwave the 1 1/4 cups chicken broth with the couscous seasoning packet for 3-5 minutes or until it starts to boil.



Step Two: Pour the boiling chicken broth over the couscous in a large bowl and cover for 5 minutes.


Step Three: Prepare your ingredients ( I have 3 cups of cooked and chopped chicken to the side).


 Step Four: Once the couscous is ready: uncover it and fluff it with a fork.  Stir in your three cups of chicken.


Step Five: Mix in the Tomatoes, Basil, Feta Cheese, Lemon Juice, Lemon Zest and Fresh Pepper.


Garnish with some fresh basil and you are all ready to eat!
 Paired with a greek salad, this makes a great dinner.
