Banana Pudding


I must say I was a little skeptical when I came across this Banana Pudding Recipe in the Healthy and Light section of my Southern Living Cookbook, but instantly I was craving this rich and creamy treat!  This pudding was easy to make and came out great.  I only wish I had made it earlier in the day and given it a few hours to chill.  Banana Pudding, to me, should be cold.  I was a little too impatient to wait and had a dish of it warm - still nice - but definitely much better the next day once it had good time to chill. I am curious to try the Magnolia Bakery version that my mom makes and compare them.  If you are looking for something different to serve at a dinner or party, this might just be the ticket!
