Afternoon Delight

Lately my mornings have been pretty free and relaxed.  So free and relaxed, that I manage to find myself in the late afternoon, wrapped up in something, having forgotten lunch, and starving.
I am not a happy hungry person (who is, right?) but I also don't like overindulging in the wrong thing just because I waited too long to eat.  So, naturally I was very excited when my mom gave me this immersion blender for Christmas - time to rediscover the smoothie!  I must admit that I haven't yet fully explored all my immersion-blending options but I have managed to make lots and lots of smoothies.  The blender stick is so compact, simple to use, and easy to clean.  I love it.

Here is the smoothie base that I have been using:
¼ cup orange juice
1 cup frozen fruit
1 banana
2-3 dollops of nonfat plain yogurt
Drizzle of honey
You can use whatever juice, yogurt, and fruit you like to suit your taste. I wanted something tropical to go with my plantains, so I used mango nectar instead of orange juice and a tropical frozen fruit mix.

Here is my tropical fruit smoothie with a side of plantain chips.

What's your favorite afternoon snack?

Happy snacking,
xo
Bridget

  1. Anything with Peanut Butter! It helps fill my belly when I'm hungry so I too don't splurge and eat the fastest and easiest food in sight... which usually = not good for me.
